Raw Chocolate Cup Cakes


If you follow me on instagram, you would have seen I prepared a heap of vegan food for my nephew's party last weekend.  I love that food can bring about so much chatting and lead to meeting new people.  A new friend I met at the party recommended a raw cup cake recipe which I just couldn't wait to try.  Here's my version of the cup cakes...you're going to love them....and yes, they're healthy!

Today's recipe is based on one from insonnetskitchen.com.  The changes I have made are to reduce fructose (hence making the cup cakes healthier and less fattening) and also to accomodate the ingredients I had handy at the time.  

15 minutes to make

Makes 6 regular sized cup cakes or 12 small ones


  • Thermomix/food processor
  • Spatula
  • Cup cake tin (only 6 moulds needed - if you have one with small sized cup cakes I would recommend using it as these cup cakes are so rich that a little bit is enough)
  • Flat plate/chopping board
  • Storage container

Ingredients for cupcakes:

  • 1/2 cup macadamia nuts
  • 1/2 cup walnuts
  • 1/4 cup pumpkin seeds
  • 1/4 cup almonds
  • 4 tbs sultanas
  • 2 tbs cacao powder
  • 1 tbs honey
  • pinch of unrefined salt
  • 1/2 cup coconut flakes


  1. Add your nuts and seeds to your thermomix/food processor and process to fine crumbs
  2. Add your sultanas, cacao, honey and salt and process again until smooth
  3. Sprinkle some coconut flakes at the bottom of each cup cake mould
  4. Scoop out your mix and fill six of your moulds
  5. Compress each cup cake down with the back of your fingers or the back of a spoon
  6. Place your flat plate/chopping board over your cup cakes and flip over
  7. If your cup cakes don't fall straight out, use a silicon spatula to loosen the edges gently (I had to tease mine a little before they came out, just gently around each one), then try to flip again

Ingredients for icing:

  • 70g avocado
  • 1 tbs cacao powder
  • 1 tbs honey


  1. Place all ingredients in your thermomix/food processor and blend, scrape down sides, blend and repeat until smooth
  2. Top each cup cake with a little icing and more coconut flakes if you wish
  3. Enjoy!
