Gluten Free Christmas Muffins

It's so close to Christmas and my almost three year old little boy is very excited about it all.  This morning he asked me to make him some muffins, and not just muffins he said to me, Christmas muffins (it was so cute).  I don't like to say no to cute requests so I created a new recipe for him.  They were a hit with the entire household.  Really easy to make using my Healthy Mums Gluten Free flour and perfect for the festive season with a touch of spice.

Needed:

  • Food processor or Thermomix
  • Spatula
  • Muffin tray
  • 12 x baking paper squares measuring 15 x 15cm
  • Cooling rack
  • Scales if not using Thermomix

Ingredients:

  • 2 cups Healthy Mums Gluten Free flour
  • 1 cup coconut sugar
  • 2 tsb baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp vanilla powder
  • 1/4 tsp nutmeg
  • 1/2 cup rice milk (or milk of choice)
  • 2 eggs
  • 1 apple, skin on, cored and cut into 8

Method:

  1. Preheat oven ot 160 degrees celcius (fan forced)
  2. Place all dry ingredients in your food processor and mix well
  3. Add apple, egg and milk and mix well again, scraping down sides and going again if needed
  4. Line each muffin mould with a baking paper square and spoon the mix in.  This is easiest done one at a time as you will need to hold the paper in place.
  5. Bake for 30 minutes
  6. Makes 12 muffins
  7. Enjoy with a little grass fed butter

Tip:

Although this muffin recipe contains sugar, it's much healthier than store bought treats you can buy your kids.  Baking your own gives you the opportunity to select the best ingredients and eliminate any nasties like preservatives and colour additives.  Plus baking with kids can be so much fun...make sure you let them lick the spoon!

Merry Christmas to you and your family

Your healthy friend,
