Gluten Free Cheese and Bacon Rolls

Every time I walk past a Baker's Delight store, my daughter begs me for a cheese and bacon roll as she used to love these when she was younger (before I made my healthy lifestyle change and removed gluten from our diet).  So I decided I had to create a recipe to make them easily at home, and here it is.

Needed:

  • Bowl
  • Spatula
  • Spoon
  • Measuring cup
  • Chopping board
  • Sharp knife
  • Buttered muffin tray
  • Oven and mitts
  • Cooling rack 
  • Hungry little tummies

Ingredients:

  • 2 cups Healthy Mums Gluten Free flour
  • 1 cup grated cheese
  • 2 eggs
  • 1 cup milk (any type, I use rice milk or dairy)
  • 1/2 tsp salt
  • 60g butter or coconut oil melted
  • 2 rashers bacon diced

Method:

  1. Pre-heat oven to 180 degrees celcius
  2. Place all ingredients in your bowl and mix well
  3. Spoon about 2 tbs into each muffin mould on your tray
  4. Place some bacon on each roll
  5. Bake for 20 mins

Tip:

These rolls are best eaten fresh or sliced up and frozen.  Once frozen they're best if toasted first.
